This recipe for baked potatoes is a little different from most. I liked it because I am very fond of mushrooms. The blue cheese gives it a little different taste from most of your potato toppings—add additional blue cheese if you want this flavor to be more pronounced.
POTATOES BAKED WITH MUSHROOMS(Serves 4)
4 medium baking potatoes, washed and pierced with a fork 3 tablespoons butter 2 cups (6 ounces) fresh mushrooms, sliced ¼-inch thick 1/3 cup green onion, sliced 1/8-inch thick ½ clove fresh garlic, minced 2 tablespoons crumbled blue cheese
Bake potatoes in a 350-degree oven for 60-75 minutes or until fork tender. Meanwhile, melt butter in 8-inch skillet. Stir in remaining ingredients except blue cheese. Cook over medium heat, uncovered, for about 2-4 minutes until mushrooms are tender crisp, stirring occasionally. Remove from heat and stir in blue cheese. Spoon into hot split baked potatoes. |
