Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

Recently we began cooking and mashing cauliflower with butter and a little milk if needed. I enjoy it like this but Alan and a lot of other people think it needs a little more flavor. This recipe, which uses sour cream and sharp Cheddar cheese, really adds a lot of punch to what can sometimes be a maligned vegetable. You may even be able to persuade non-cauliflower eaters to enjoy this dish.

CAULIFLOWER CASSEROLE

(Serves 6)

1 medium head cauliflower

½ teaspoon salt

¼ teaspoon pepper

1 cup sour cream

1 cup grated sharp Cheddar Cheese

3 teaspoons sesame seeds, toasted

Break cauliflower into florets. Cook covered, in a small amount of salted water for 10-15 minutes or just until fork tender. Drain well. Place half of cauliflower in 1-quart dish. Season with salt and pepper. Spread ½ cup sour cream and ½ cup cheese over cauliflower. Top with 1 ½ teaspoons sesame seeds. Repeat layer. Bake at 350 degrees until cheese melts and the sour cream is hot, about 15 minutes.
