Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I am always glad when the months with “r’s” are here again because that means that it is oyster season. Nothing could be much easier than this recipe for Pan Baked Oysters or much better. I always enjoyed it when my mother served a meal like this when I was growing up – she would usually serve this or scalloped oysters with slaw and a dessert. If you have gone to the expense of buying select oysters, please use really good quality bread for your toast – it makes a difference.

PAN BAKED OYSTERS

(Serves 4)

1 pint select oysters

1 teaspoon dry sherry

4 slices of well-buttered toast

Preheat oven to 450 degrees.

Place the oysters in a shallow casserole reserving the liquid.

Sprinkle the oysters lightly with sherry – you may need a little more sherry.

Cover with enough oyster liquor to reach about half-way up the oysters.

Bake for about 5 minutes,  or until edges are curling.

Serve over the toast and pour pan drippings over oysters and toast.
