Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I like having a salad in my refrigerator that I can pull out and add to a meal. Marinated vegetable salads are one of my favorites. I especially like this Black-eyed Pea Salad. If you don’t want to use ripe olives when you prepare this try substituting ¼ cup of chopped celery. This salad will keep for several days in the refrigerator – however I like to take it out and let it stand for about 30 minutes before I serve it.

BLACK-EYED PEA SALAD

(Serves 6)

1 16-ounce package frozen black-eyed peas

¼ cup chopped green pepper

¼ cup chopped onion

¼ cup sliced ripe olives (optional)

3 tablespoons diced pimiento

¼ cup vegetable oil

¼ cup cider vinegar

2 tablespoons red wine vinegar

2 tablespoons water

¼ teaspoon garlic salt

1 teaspoon pepper

¼ teaspoon hot sauce or to taste

Cook black-eyed peas according to package directions being careful not to overcook; drain.

Combine peas and green pepper, onion, olives and pimiento in a medium bowl.

Combine oil and remaining ingredients in a jar. Cover tightly; shake vigorously.

Pour dressing over vegetable mixture; toss gently to coat. Cover salad, and chill for 2 to 3 hours.
