Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I am glad to see more recipes using cooked pears. I think you will enjoy this Pear Crumble with a Cheddar and Oatmeal Topping. The sharp Cheddar cheese is a nice contrast to the sweetness of the pears. It is hard to beat warm fruit desserts like this one.

PEAR CRUMBLE

with CHEDDAR and OATMEAL TOPPING

(Serves 8)

½ cup all purpose flour

2/3 cup firmly packed light brown sugar

¾ cup old-fashioned rolled oats

¼ teaspoon cinnamon

¼ teaspoon nutmeg

1 1/3 cups coarsely grated sharp Cheddar cheese

5 tablespoons cold unsalted butter, cut into bits

½ cup finely chopped walnuts, toasted lightly

6 firm-ripe Anjou pears (about 3 pounds), peeled,

cored and cut crosswise into very thin slices

2 ½ tablespoons all-purpose flour

¼ cup firmly packed light-brown sugar

In a small bowl combine well the flour, brown sugar, oats, cinnamon, nutmeg, Cheddar cheese, butter and a pinch of salt. Blend the mixture until it is pebbly. Then stir in the walnuts.

In another bowl combine the pears, flour and brown sugar, tossing the mixture to combine it well. Spread it evenly in a buttered 13x9 inch baking pan.

Sprinkle the pear mixture with the topping and bake in the upper third of a preheated 375 degree oven for 30 minutes, or until the topping is crisp and brown. Serve the crumble warm.
