DAVID EARL WICKER David Earl Wicker, 60, of 2754 Flint Ridge Road, Siler City died Thursday (11-20-03) at Veteran Hospital in Durham. Funeral Services were held 2 p.m. Sunday (11-23-03) at Smith & Buckner Funeral Home in Siler City with Rev. Paul Shrum officiating. Burial followed at Flint Ridge United Methodist Church Cemetery. Mr. Wicker was a native of Chatham County, an Army veteran and was a farmer. He is survived by a sister-in-law, Lorena E. Wicker of Siler City; nephew, Maurice Wicker of Siler City; great-nephew, Joseph Allen Wicker of Siler City and several cousins. HANK WILSON Hank Wilson, 67, of 63 Hanks Drive, Siler City died Thursday (11-20-03) at Moses H. Cone Memorial Hospital in Greensboro. Funeral Services were held 2 p.m. Sunday (11-23-03) at Rocky River Baptist Church in Siler City with Rev. Greg W. Burriss officiating. Burial followed in church cemetery. Mr. Wilson was a native of Chatham County, a member of Rocky River Baptist Church where he was a member of the Men’s Bible Sunday School Class and a chairman of the Grounds Committee. He was retired owner and operator of Hank’s TV. He is survived by daughters, Crystal W. Lindley of Siler City, Sylvia W. Worsham of Acworth, GA, Judy W. Chriscoe of West End, Rita W. Calhoun of Southern Pines; brothers, Roland Wilson and Bobby Wilson both of Goldston; sisters, Beatrice W. Brewer of Bennett, Shirley W. Rives of Bear Creek and eight grandchildren. Memorials may be made to Rocky River Baptist Church Cemetery Fund, 4436 Siler City-Snow Camp Road, Siler City, NC 27344. PHILLIP VET CLARK Phillip Vet (Phil) Clark, 55 of 420 Marion Drive, Wilmington, NC died Monday, November 17, 2003 He was preceded in death by his parents, Ben and Vivian Poe Clark of Siler City. CORINA COOPER Corina Cooper, 61, of Brooklyn, NY , died on November 3, 2003, at Brookdale Hospital, Brooklyn. Funeral services were held at Vance R. Jorsling Funeral Chapels, Brooklyn, on Saturday, November 8. Ms. Cooper was a native of Siler City where she was a graduate of Chatham High School and a member of Corinth A.M.E. Zion Church. She relocated to Brooklyn in 1959. She was a daughter of the late Nannie Mae Reaves Cooper Foxx and the late Herman Devoyed Cooper. She was preceded in death by her son Kenneth Cooper. She is survived by two sons Robert (Desimarie Wright) and Charles Cooper; two daughters Sheryl Cooper-Richardson (Mack) and Tonya Milan (Sean), all of Brooklyn, NY; one sister Mary (Peggy) Hall (Carlyle) of Fort Lauderdale, FL; two brothers Herbert Cooper (Frankie) of Aurora, CO and Cleveland Cooper (Shirley) of Suisun City, CA; six grandchildren; nieces and nephew Deborah, Felicia, and Garrett (Skeet); devoted friend Viola Segar and many other relatives and friends. R.D. SMITH R.D. Smith, 64, of 1885 Silk Hope Road, Siler City died Sunday, November 23, 2003 at Chatham Hospital in Siler City. Funeral services were held 2:00 p.m. Tuesday, November 25 at Mt. Vernon United Methodist Church in Siler City with Rev. Lamont Hemminger and Rev. Michael Smith officiating. Burial followed in the church cemetery. Mr. Smith was a native of Chatham County and a member of Mt. Vernon United Methodist Church. He was a retired electrician with Chatham Electric. He was preceded in death by his parents Javan and Annie Bare Smith. He is survived by his wife, Mary Guthrie Smith of Siler City; daughters, Michelle Smith and husband, David of Snow Camp, Debbie Ingle of Siler City, Wanda Stuart of Siler City; grandsons, Wes Ingle and wife, Ashley, Josh Ingle all of Greensboro; great granddaughter, Sydney Ingle of Greensboro; sister, Betty Crews of Kernersville; brothers, Jesse Earl Smith and wife, Frances, June Smith and wife, Elaine, Joe Smith and wife, Virginia all of Siler City. By Mary John Resch The holiday season tends to be a busy time of the year regardless of how well organized you are or how much preparation you have done in advance. Because of this all of us need easy main dishes that we can literally sling together. This recipe appeared in one of the Taste of Home publications about a year ago and we tried it. I thought it was delicious. I took the leftovers to Mary Alice and she and Steve agreed that the recipe is definitely a keeper. Because you have a lot of juice with this recipe, you need to be sure and use a large roasting pan. The sauce is delicious with rice or noodles. Cranberry Beef Brisket Serves 10 1 fresh beef brisket (4-5 pounds) 2 tablespoons vegetable oil 1can (16 ounces) whole berry cranberry sauce 1/2 cup beef broth 1/2 cup red wine 1 envelope dry onion soup mix Trim visible fat from brisket and discard. In a large skillet, brown beef in oil on both sides. Remove from pan and transfer to a greased roasting pan. In a bowl, combine the remaining ingredients; pour over beef. Cover and bake at 300 degrees. Check after 2 hours, if meat is not tender continue cooking until it is tender. Watch carefully at this point. Strain cooking juices if desired to serve with the meat. Our roast was approximately 5 1/2 pounds after it was trimmed. We checked the meat at about 2 1/2 hours and it was done. Sauce was delicious. Your cooking time may vary depending on your oven and the pot you use. We were using a heavy pot with a tight fitting lid. |
