Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

This Mincemeat Ginger Cake is really quick and easy to prepare. It is the perfect amount of batter for a mini-Bundt pan. I like this cake because it is not overly sweet. Buy an extra jar of mincemeat during the holiday season so you can make one of these cakes on the spur of the moment.

MINCEMEAT GINGER CAKE

(Serves 8)

1 package gingerbread mix (approximately 14 ounces)

1 cup prepared mincemeat

½ cup water

1 egg

In a large bowl, combine all ingredients and mix well. Grease and flour a 6-cup Bundt pan. Bake at 350 degrees for about 30 minutes or until cake tests done. Cool in pan for 5-10 minutes; turn on wire rack to complete cooling. Serve warm with whipped cream or Rum syrup.
