Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

Several weeks ago I fixed this Apple-Onion Casserole and we both really enjoyed it.  The leftovers were delicious  when reheated in the microwave.  When I prepared this I used the sweet onions that are available in the stores now and Granny Smith apples.  This is a recipe that I will use a lot.

APPLE-ONION CASSEROLE

(Serves 6)

3 large mild onions, sliced

½ cup brown sugar (or to taste)

1/8 teaspoon salt

1/8 teaspoon pepper

¼ cup butter

4 large cooking apples, peeled and sliced

1 cup buttered bread crumbs

Lightly butter a casserole. Add a layer of onions, sprinkle with half of the brown sugar. Season with a sprinkling of salt and pepper and dab on half the butter.  Add a layer of apples and top with the remaining sugar.  Season again with salt and pepper  and dab on the remaining butter.  Top with buttered bread crumbs.

Bake at 300 degrees for 2 hours.

Wonderful with pork.
