LOUISE H. HOLLEMAN Louise H. Holleman, 85, of 802 Beaver Creek Road in Chatham County died Sunday, May 23, 2004 at Hillcrest Convalescent Center in Durham after a lengthy struggle with Alzheimers. She enjoyed decades of attending Bell's Baptist Church. She taught Sunday School, and grew and arranged its flowers each Sunday for many years. Her family will miss her wonderful home-cooked meals and glorious flowers that were a tribute to her hard work ethic. Many Chatham County youngsters were fortunate to have learned sewing and homemaking from Louise, as a result of her many years as a 4-H leader. A service celebrating her life and home-going will be held on Wednesday, May 26 at 2 p.m. in the Bells Baptist Church. Burial will be in the Bells Cemetery. Surviving are two sons, L. Worth Holleman, Jr. and wife, Kim of Greensboro and Timothy A. Holleman and wife, Ann of Chapel Hill. Also surviving are five grandchildren: Caroline, Worth and Elliott of Greensboro and Christy and Anna of Chapel Hill, three sisters; Blonza H. Smith of Apex, Clorine H. Marsh of Greensboro, and Harriet H. Tellefsen of Wilson, and many special nieces and nephews. Flowers are welcome, or memorials may be made to the charity of one's choice. BOBBY STEWART TOWNSEND, SR. Bobby Stewart Townsend, Sr., 51, of Siler City died Sunday (05-23-04) at UNC Hospital in Chapel Hill. Funeral services were held at 2 p.m. Wednesday, (05-26-04) at Siler City Church of God with Rev. Neal Kight officiating. Burial followed in Goldston Cemetery, Goldston. Mr. Townsend was a native of Avery County, custodian with Palm Harbor Homes, a member of Goldston Baptist Church and attended Siler City Church of God. He was preceeded in death by a sister, Jane T. Hicks. Survivors include sons, Bobby S. Townsend, Jr. of Bear Creek, N.C., Brian Townsend of Holden Beach, N.C. daughters, Brandy Townsend and Brooke Townsend, both of the home; parents, Carson and Mary Mastin Townsend of Goldston, N.C.; brother, Lewis Townsend of Pittsboro; grandchildren, Dean Townsend, Barrett Townsend, Alanya Green and Little Brooke Townsend. Memorials may be made to the American Cancer Society, Chatham Unit, PO Box 4192, Raleigh, NC 27629-1912; Hospice of UNC, PO Box 1077, Pittsboro, NC 27312; or to the Siler City Church of God, 510 North Fifth Avenue, Siler City, NC 27344. LINWOOD HAROLD ELLIS Linwood Harold Ellis, 70, of Siler City died Saturday, (05-22-04) at UNC Hospital in Chapel Hill. Funeral service and burial were held at 2 p.m., Tuesday, (05-24-04), at Hickory Mountain United Methodist Church, Pittsboro with Rev. Darrell Williams, officiating. Mr. Ellis was a native of Chatham County, an Army Veteran of the Korean Conflict and a retired foreman for Piedmont Poultry of Bonlee. Surviving are former wife, Carolyn Ellis of Siler City; daughter, Debbie Johnson, Siler City; sons, Mike Ellis and Justin Ellis of Staley, Timmie Ellis, Johnnie Ellis, and Jason Ellis all of Siler City, Donnie Ellis of Bear Creek; sisters, Rachel Blalock and Nancy Beal of Bear Creek, Ruby Holt of Siler City and Shirley Thomas of Sanford; brothers, George (Buck) Ellis of Bennett, Obie Ellis of Lemon Springs, Bobby Ellis of Moncure; Billy Ellis of Staley, Walter Lee (Dink) Ellis of Bear Creek; thirteen grandchildren and one great-granddaughter. MRS. VIOLA C. THOMPSON Mrs. Viola C. Thompson, 69, of Siler City died Thursday, (05-20-04) at SunBridge Nursing Home in Siler City. Funeral services were held at 2 p.m., Monday, (05-24-04) at First Missionary Baptist Church, Siler City with Rev. Barry R. Gray, pastor officiating. Mrs. Thompson was of Chatham, a certified nurses assistant, and a former member of First Baptist Church, Pittsboro. Surviving is a god child, Whitney Jones. In lieu of flowers, financial donations may be made to help cover final expenses. VIRGINIA McTILLMAN Mrs. Virginia McTillman, 89, of Siler City died Wednesday, (05-19-04) at Care View Nursing Home. Funeral services were held at 2 pm, Sunday, (05-23-04) at Gees Grove AME Zion Church with Rev. Allen Moore officiating. Burial followed in the church cemetery. She was a native of Lee County, South Carolina and a member of Gees Grove AME Zion Church. Survivors include sisters, Geneva Rodgers of Siler City, Helen Dancy of Roosevelt, N.Y. and Mary Wiggins of Brooklyn, N.Y. |

When you are in a hurry, a stir fry is always a quick and easy way to prepare a meal. The only secret that I have found to this type of preparation is to have all of your ingredients ready to go and within arms reach when you start cooking.
I think the orange-ginger-red pepper flake combination in this stir fry really give this chicken preparation some punch. Play with the amount of red pepper you use depending on how hot you like your food. When you are fixing the orange zest, be careful not to get too much white with your zest since this is what makes it bitter.
SPICY ORANGE CHICKEN STIR FRY(Serves 4)
2 whole chicken breasts, boned and cut into strips 1 Tbsp. cornstarch 2 tsp. ground ginger ½ tsp. red pepper flakes or to taste 2 Tbsp. peanut oil 1 onion, cut into 1-inch pieces ¼ cup orange zest (rind, cut into thin strips) 2 Tbsp. soy sauce 3 Tbsp. orange juice 1 tsp. sugar 1 tsp. vinegar ½ cup slivered almonds, cashews or peanuts
Combine soy sauce, orange juice, sugar and vinegar. Set aside.
Combine chicken, cornstarch, ginger and red pepper. In wok, stir-fry chicken mixture in peanut oil, for approximately 3 minutes.
Add onion and orange zest to wok and stir fry briefly.
Add soy sauce mixture to wok. Cook for approximately 2 more minutes. Add nutmeats.
Serve hot with rice. |
