Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

Several weeks ago I was excited to receive a note from Gloria Lee because I was sure it would contain a great recipe. I was right. Gloria says this cake is delicious and very moist. She said that if someone could not eat chocolate perhaps you could substitute instant vanilla pudding for the chocolate pudding and simple rename it a White Russian Cake. I have also seen recipes for Black Russian Cake that use chocolate cake mix as well as chocolate pudding. However you choose to prepare the cake I think you will enjoy it.

 BLACK RUSSIAN CAKE

 (Serves 16)

1 18.25-ounce package Duncan Hines yellow cake mix

1 6-ounce package instant chocolate pudding

½ cup sugar

4 eggs

1 cup wesson oil

¼ cup Kahlua

¼ cup vodka

¾ cup water

Glaze:

½ cup confectioners sugar

¼ cup Kahlua

Mix all cake ingredients and beat for 2 minutes. Pour into a greased and floured bundt cake pan. Bake at 350 degrees for 55-60 minutes or until cake tests done. Cool for 10 minutes in pan.

Mix glaze ingredients. Invert cake onto a serving plate and slowly pour the glaze over the warm cake.

You could substitute vanilla pudding and call it a White Russian Cake.

I have also seen recipes for this cake that call for a chocolate cake mix.
