By Mary John Resch We enjoyed this Scalloped Pineapple. It makes a wonderful dish to serve with either pork or chicken. The leftovers reheat nicely, too. Be sure and use unsweetened pineapple when you make this. SCALLOPED PINEAPPLE (Serves 6) 20 oz. unsweetened canned pineapple chunks or tidbits, drained, reserving 6 tablespoons of juice ¼ cup sugar ¼ cup flour 8 ounces sharp cheddar cheese, grated ½ teaspoon lemon juice Preheat oven to 350 degrees. Mix sugar and flour together. Combine this mixture with the drained pineapple. Grease a 6-cup pyrex dish and alternate layers of pineapple mixture with cheddar cheese – I had 2 layers. Mix lemon juice with reserved 6 tablespoons of pineapple juice and pour over the pineapple and cheese. Bake 50 – 60 minutes. |
