I’m always looking for new potato recipes. This recipe interested me because I had never thought of using mozzarella cheese with potatoes but this in an ingredient that I usually have in my refrigerator. I enjoyed this dish. It is easy to prepare and you can get the messy part done in advance. This is a good recipe to keep in mind when you want to give potatoes a little extra pizzazz.
Potatoes Mozzarella Serves 6
4 large potatoes 4 tablespoons butter 1/8 cup of milk 1 cup grated mozzarella cheese ½ teaspoon salt ¼ teaspoon pepper ¼ cup grated Parmesan cheese
Peel and quarter potatoes. Boil in salted water until tender, about 20 minutes. Drain and mash with 2 tablespoons butter, milk and salt. Add mozzarella. Taste and add additional salt and pepper if desired. Place in a greased 2 quart baking dish and sprinkle with Parmesan. Dot with remaining butter.
Bake at 350 degrees for 25 minutes or until hot and bubbly. |
