FLETCHER W. BROOKS Fletcher W. Brooks of Siler City died Friday, (03-11-05) at Kindred Hospital in Greensboro. Funeral services were held Wednesday (03-15-05) at 2 pm at Jordan Grove A.M.E. Zion Church with Rev. James Smith, Jr. officiating. Burial followed in the church cemetery. Mr. Brooks was a native of Chatham County and a member of Jordan Grove Church. He was a retired employee of First Union National Bank and a member of the American Legion post in Siler City. Survivors include a son, Jennings Brooks of Greensboro and daughter, Helen Handon of Suitland, Md. JACK LINBERG IMBERLY, JR. Jack Linberg Wimberly, Jr., 53, of Pittsboro died Saturday, (03-12-05). Funeral services were held at 3 p.m. Tuesday, (03-15-05) in the Griffin Funeral Service Chapel. Burial followed in Pleasant Hill Baptist Church cemetery. He was a native of Roberson County and a construction worker. Jack was a veteran of the US Air Force. Survivors include his father, Jack L. Wimberly, Sr.: daughters, Bobbie J. Howell of Mt. Sidney, Va., Sherry Waddell of Fuquay-Varina, Janice Huffman of Broadway son, Jack L. Wimberly III of Sanford; and a sister, Terri Tripp of Chapel Hill. MARY ELIZABETH ELLIS Mary Elizabeth Ellis, 83 of Pittsboro died Thursday (03-10-05) in Randolph Hospital in Asheboro. Funeral services were held at 1 p.m. Sunday, (03-13-05) in Griffin Funeral Service Chapel with Rev. Vince Holder officiating. Burial followed in Manns Chapel Church Cemetery. Mrs. Ellis was a native of Creedmoor and a homemaker. Survivors include daughters, Mary George of Ramseur, Louise Hill of Asheboro; son, Jesse Ellis, Jr. of Pittsboro; seven grandchildren and 17 great-grandchildren. REX WILKIE Rex Wilkie, 79, of Bear Creek died Sunday, (03-13-05) at Central Carolina Hospital in Sanford. Funeral services were held Wednesday, (03-16-05) at 2 pm at Hickory Grove Baptist Church with Rev. Darrell Garner officiating. Burial followed in the church cemetery. Mr. Wilkie was a native of Chatham County, a retired poultry farmer and a member of Hickory Grove Baptist Church. He was an Army veteran of World War II. Survivors include his wife, Moncie Tally Wilkie of Bear Creek; son, Randy Wilkie of Bear Creek; daughters, Joan Jessup of Ramseur, Connie Henson of Siler City; sisters Ruth W. Brown of Siler City, Mozelle W. Steele of Archdale; brothers, Lacy Wilkie and Billy Wilkie, both of Siler City; seven grandchildren and six great-grandchildren. PORTER STONE HALE Porter Stone Hale, 90, of Siler City died Friday, (03-11-05) at SunBridge Care Facilities. Funeral services were held at 2 pm on Sunday, (03-13-05) at Sapling Ridge United Methodist Church, Pittsboro with Rev. Lamont Hemminger officiating. Burial followed at Center United Methodist Church Cemetery in Snow Camp. Mrs. Hale was native of Chatham County and a member of Sapling Ridge United Methodist Church. Survivors include sons, James Winfred Cooper of Siler City, Robert (Bob) L. Cooper of Snow Camp, Donald Garrett Hale of Winston-Salem; sister, Edith Perry of Randleman; five grandchildren, thirteen great-grandchildren and nine great-great-grandchildren. JAMES McSWAIN James McSwain, 52 of Bear Creek died Friday, (03-11-05) at his residence. Funeral services were held at 3 pm on Monday, (03-14-05) at Gees Grove A.M.E. Zion Church with Rev. Allen Moore officiating. Burial followed in this church cemetery. Mr. McSwain was a native of Chatham County and an employee of Joan Fabrics. He was a graduate of Chatham Central High School and a member of Gees Grove A.M.E. Zion church. Survivors include his wife, Patricia L. McSwain; daughter, Lindsey M. McSwain of the home; sons, Janus P. McSwain, of the home; and sister, Judy A. Mason of Siler City. REV. ROSEBUD M. GOLDSTON Rev. Rosebud M. Goldston, 75, of Pittsboro died Wednesday, (03-09-05) at UNC Hospital in Chapel Hill. Funeral services were held at 3 p.m., Friday (03-11-05) at Alston Chapel U.N.H. Church with Elder Carrie H. Bolton officiating. Burial followed in the church cemetery. Rev. Goldston was a member of Alston Chapel Church, Associate Minister, Mother Board, Seven Brother Union. Survivors include her mother, Mary Macie Goldston; sister, Rev. Roxzelle D. Goldston of Pittsboro; brothers, Arthur Lee Goldston of Pittsboro, Robert Earl Alston of the home, Bryant Christopher Headen of Siler City. MR. BENNIE MARSH Mr. Bennie Marsh, 93, of Pittsboro died Tuesday, (03-08-05) at UNC Hospital in Chapel Hill. Funeral services were held at 1:30 pm Saturday, (03-12-05) at Evans chapel AME Zion Church, Siler City with Dr. J. C. White officiating. Burial followed in the church cemetery. Survivors include daughters, Lenoy Alston, Durham, Nellie Crawford, Washington, DC, Irma L. Marsh, Frances S. Vittano, Mary L. Marsh, all of New York, sons, Jerry L. Marsh, Joseph Marsh of New York; seven grandchildren, nine great-grandchildren and one great-great-grandchild. VIRGIL HARRIS Virgil Harris, 77, of Siler City died Tuesday, March 15, 2005 at Kindred Hospital in Greensboro. Graveside services will be held at 2:00 p.m. Thursday, March 17, 2005 at Mt. Vernon United Methodist Church Cemetery, 3631 Mt. Vernon-Hickory Mountain Road, Siler City, with Rev. Lamont Hemminger officiating. Mr. Harris was a native of Chatham County and a cattle farmer. Survivors include his wife, Jean Goswick Harris of Siler City; aunts, Maude Kimrey, Mary Ray, Jewel Harris, all of Siler City; numerous cousins; special cousin, Darrell Harris of Siler City; step-daughters, Renee McDonald, Burlington, Rhonda Lewis, Haw River, Darlene Pate, Siler City; and two step-grandchildren. INEZ WEBSTER MANN Inez Webster Mann, 85, of Pittsboro died at her home Wednesday morning, March 9, 2005. A native of Chatham County, she was very active in community affairs, a member of Orange Chapel United Methodist Church and a homemaker. She was preceded in death by her husband, Ben Mann. A funeral service was conducted at 2:00 p.m. Friday, March 11, 2005 at Orange Chapel United Methodist Church with the Rev. Patricia S. Sykes officiating. Burial followed in the church cemetery. She is survived by two daughters, Juanita McIver of Bear Creek and Glenda Fay Baity and her husband Darold of Winston Salem; two sons, William F. Mann and his wife Carolyn of Chapel Hill and Raymond Mann and his wife Martha of Pittsboro; one sister, Ida W. Sink of Burlington; ten grandchildren, Kenneth and Allen McIver, Cyndi Comito, David, Darold and Dean Baity, Raye and Paul Mann and Michael and Leslie Mann Parker and eleven great-grandchildren. ELIZABETH BLAIR BURGESS Elizabeth Blair Burgess, 92, died Thursday, March 10, 2005 in Raleigh at Springmoor Retirement Community where she had lived since 1986. Elizabeth was born November 8, 1912 in Chatham County to George Walker Blair and Audrey Womble Blair. She grew up in Pittsboro and was an active member of the Pittsboro United Methodist Church. Following her graduation from Pittsboro High School in 1929, she attended Louisburg College and the University of Virginia. For many years she lived and worked in Raleigh with the North Carolina State Government. She also worked later in the Athletic Office of The University of North Carolina in Chapel Hill. During World War II she was a volunteer with the American Red Cross. She also lived in Pittsboro, Wilson, Roseboro and Litchfield Beach, S.C. and was the widow of Colonel Joseph P. Halliday. On March 1, 1958, she married William Roderick Burgess of Roseboro. Their wedding was held in the Pittsboro United Methodist Church. In addition to her parents, Elizabeth was predeceased in death by her sister Audrey Blair, her husband, Rod Burgess and a brother, Henry Kime Blair. Surviving are her brother, Dr. Walker Blair and wife, Mary Helen of Burlington; sister, Adelaide Farmer and husband, Kenneth of Greensboro; step-sons, William R. Burgess, Jr and wife Noi of Puyallup, Washington and Scott Burgess and wife Gail of Fayetteville; and grandson Chris. She leaves many special nieces, nephews, great nieces and nephews and a great, great niece. Funeral service was held at the Pittsboro United Methodist Church at 4 pm on Sunday, March 13, 2005 with the Pastor Rev. Jack Page and Rev. Ray Gooch officiating. JOHN HEADEN "JACK" FOUST John Headen "Jack" Foust, 78, of 940 Foust Road, Siler City died Friday, March 11, 2005 at VA Hospital in Durham. Funeral services were held at 2:00 pm on Monday, March 14, 2005 at Mt. Vernon Springs Presbyterian Church with Dr. Cecil Callis, officiating. Burial followed in the church cemetery. Mr. Foust was a native of Chatham County, a member of Mt. Vernon Springs Presbyterian Church where he was a member of Zollie Martin Adult Sunday school class, a deacon, elder and trustee. He was a member of Mt. Vernon Lodge #143, Bonlee, served in the South Pacific with the US Navy during WWII and retired from Chatham Motors as parts manager with 28 years of service. He was preceded in death by a brother, Charles R. Foust. Survivors include his wife, Elizabeth "Libby" Foust of Siler City; son, John Headen Foust, Jr. of Siler City; sister, Sarah F. Smith of Siler City; brothers, Ben S. Foust and Eugene H. Foust, Jr., both of Siler City; sisters-in-law, Sue T Lampley of Charlotte and Helen J. Thompson of Lilesville; and several nieces, nephews, great nieces and great nephews. Memorials may be made to Mt. Vernon Springs Scholarship Fund, PO Box 752, Siler City, NC 27344; Mt. Vernon Lodge #143, Bonlee, NC 27213; or a Charity of Choice. THOMAS EDISON MORRIS Thomas Edison Morris, age 74, passed away Sunday, March 13, 2005 at Hemet Valley Medical Center in Hemet, CA. He was born in Chatham County, North Carolina on September 21, 1930. At three years old, he and his sister Lucille (Farrell) were placed in an orphanage. With a football scholarship and excellent grades, Morris put himself through High Point College in North Carolina. From there he entered the United States Air Force, where he distinguished himself by rising through the ranks to Colonel. Among his awards and decorations, at Vanndenburg AFB, he received meritorious Service Medal. Colonel Morris was deputy commander, 4315th CCTS, received recognition as a result of his last assignment as chief of the Ballistic Missile Staff Course, his leadership resulted in major contribution to the effectiveness and the success of the Ballistic Missile staff course. He retired from the Air Force after 30 years of service and lived in Hemet the last 15 years. He is survived by a sister, Lucille Farrell of N.C.; half brother, John Waylon Farrell of N.C.; sons, Thomas Dana Morris of CA.; best friend and POA, Joe Pentolino of Hemet, CA. Funeral services will be held at 2 p.m., Tuesday, March 22, 2005, at Miller-Jones Hemet Chapel. Graveside services and burial will be Wednesday, March 23, 2005 at 11 am in the Staging Area #5, Riverside National Cemetery, Riverside, CA. Visitation will be held Monday, March 21, 2005 from 4-8 p.m. at Miller-Jones Hemet Chapel.

By Mary John ReschThis is one of the best eggplant dishes that I have tried. It is very easy to prepare and is delicious. If you had leftovers and used a larger eggplant, I think you could layer a slice of eggplant, a slice of tomato and a slice of mozzarella cheese and serve is as on open-faced sandwich for a light lunch.
BAKED CHEESE-COATED EGGPLANT(Serves 4)
1 medium eggplant or 2 small ones 3 tablespoons butter, melted ¼ cup grated Parmesan cheese ¼ cup seasoned dry breadcrumbs ½ teaspoon salt or to taste ¼ teaspoon pepper 1 tablespoon minced fresh parsley
Cut eggplant in 1/2–inch slices and soak in cold salted water for 30 minutes. Drain and dry. Combine Parmesan, crumbs, and seasonings. Dip eggplant slices in melted butter, then in crumbs, and place in a single layer in a greased 9x13 inch baking dish.
Bake at 350 degrees for 20 minutes or until golden and bubbly.
