By Mary John Resch
When we were at Mary Alice’s several weeks ago she served us this Spinach-Cranberry Salad and we both enjoyed it. As well as tasting good it is a very pretty salad. As you can see from reading the recipe you can adjust it according to your own taste. Mary Alice did not use the bacon grease in the dressing. Her friend Kyla shared this recipe with her.
SALAD/CRANBERRY-SPINACH(Serves 8)
1 tablespoon butter, oil or bacon grease 4 slices bacon ¾ cup blanched slivered almonds 1 pound fresh spinach 1 cup dried cranberries 2 tablespoons toasted sesame seeds ½ cup sugar (slightly less if desired) 2 teaspoons minced onion ¼ teaspoon paprika ¼ cup white or cider vinegar ½ cup oil (may use part bacon grease if you want it for flavor—if you want a healthier version, substitute chicken broth for part of the oil)
Fry 4 slices bacon. Crumble and set aside.
Melt butter over medium heat. Saute almonds until they are slightly toasted. Remove from heat, drain and cool.
In large bowl combine spinach, almonds and cranberries. Toss gently.
In medium bowl, whisk together the sesame seed, sugar, onion, paprika, vinegar and oil. Toss with the spinach mixture. Top with crumbled bacon just before serving. |
