DONALD ELLIS KLOMPARENS

Master Donald Ellis Klomparens, was born and died Wednesday, (06-16-04) at UNC Hospital in Chapel Hill.

   Survivors include his parents, Aaron Blake and Michelle Simmons Klomparens; brothers, Jacob Klomparens; grandparents, Vicki and Terry Klomparens and Lori and Brian Simmons, all of Pittsboro; and his great-grandparents, Helen Stoops and Bobby Ellis, both of Pittsboro.

  Those wishing to honor Donald’s memory are asked to make memorial donations to The Make-A-Wish Foundation of Eastern North Carolina, 3803-B Computer Drive, Suite 108, Raleigh, NC 27609.

  JOHNNY R. GEORGE

  Johnny Russell George, 65, of Ramseur, died Thursday (06-17-04) at UNC Hospital in Chapel Hill.

  Funeral services were held at 2 p.m. Sunday, (06-20-04) at Brown’s  Chapel Christian Church with Rev. James Brewer and Rev. Vince Holder, officiating. Burial followed in the church cemetery. 

  George was a native of Moore County and had been employed with Cherokee Brick Company.

  Survivors include wife, Mary Ellis George of the home; sons, Johnny R. George, Jr. of Ramseur and Mark George of Asheboro; daughters, Penny Ellis of Ramseur, Dale Valentin of Siler City; brothers, Harvey George of Pittsboro, Joseph George of Moncure, and Junior George of Sanford; sisters, Hazel Woods of Moncure and Wanda Harrell of Sanford; and eight grandchildren. 

  Memorials may be made to: Brown’s Chapel Christian Church, 608 Brown’s Chapel Road, Robbins, NC 27325.

TAMMY LYNN HOLT TIGHE

  Tammy Lynn Holt Tighe, 26, of Siler City died at Chatham Hospital Saturday (06-19-04).

  Funeral services were held at 11 am  Wednesday, (06-23-04) at  Center United Methodist Church with Rev. Richard Farmer and Rev. Dale Shackleford officiating. Burial was in the church cemetery.

   She was a native of Lee County.

  Survivors include a daughter, Destiny Marie Markwell; parents, Michael Lee Holt and Ginger Leigh Logan Holt of Sanford; maternal grandfather, Herman Logan, and fiancée, Eugene Simmons of Siler City.  

  RALPH DAVID BOWDEN

  Ralph David Bowden, 46, of Greensboro died Monday (06-07-04) at Wesley Long Hospital.

  Funeral services were held Friday (06-11-04) at 3 pm at Rocky River Baptist Church with Rev. Earl Jeffries officiating. Burial followed in the church cemetery.

  Bowden was a native of Chatham County, formerly of Siler City, a member of Oliver’s Chapel AME Church, and was employed at K-Mart Distribution Center.

  Survivors include sisters, Nancy Headen, Swepsonville, Priscilla Foxx, Judy Bowden, Mary Bowden, Barbara Coltrane, Anita Hodnett, all of Liberty; brothers, Harold, Bruce, and Dwight Bowden, all of Siler City, William Bowden and  Sam Bowden, both of Hillsboro; and step-mother, Gladys Rogers Bowden.

Mrs. AVIS McKINNEY ELDRED

Mrs. Avis McKinney Eldred, 72, of 114 Dogwood Drive, Mebane, went to be with her Lord on Thursday, June 17, 2004. She was a native of Montpelier, Vermont.

She was preceded in death by her husband Dennis Edson Eldred, a son Jeffery Noice Eldred, a sister Dawn McKinney, and her parents Wayland and Mildred McKinney.

She was a loving wife, mother, and homemaker. She was a much loved and respected member of Abundant Life Church in Hillsborough.

Survivors include four daughters, Mrs. Lisa Germain and Ms. Tabetha Eldred, both of the home, Mrs. Sherry McClellan of Wolcott, Vt., and Mrs. Amy Carden of Louisburg, N.C.; five sons, Mr. Nick Eldred of Coolemee, NC., Mr. Matthew Eldred of Mebane, Mr. Gregory Eldred of Greensboro, Mr. Andrew Eldred of New Zealand, and Mr. Daniel Eldred of Mebane; three sisters, Mrs. Wanda Abascal of Northfield, Vt., Mrs. Iona Sweet of the home, and Mrs. Linda Matheson of Burlington; fourteen grandchildren and ten great-grandchildren.

Funeral services were conducted at 2 pm Saturday, June 19, 2004 at Abundant Life Church, 512 US 70 East, Hillsborough. Burial followed at Oakwood Cemetery in Mebane.

Memorials may be made to the ministry of Steiger International in honor of Avis Eldred, PO Box 480, Huntington, Mass. 01050.  

MARGIE McNEILL HUSSEY

  Mrs. Margie McNeill Hussey, 82, of Robbins died Monday (06-21-04) at her home.

  Funeral services will be held at 2 p.m.,  Thursday, (06-24-04) at Smyrna United Methodist Church, with Rev. Jimmy Weaver, Rev. Joe Forbes and Rev. Jimmy Tatum officiating. Burial will follow in the church cemetery.

  Mrs. Hussey was a native of Randolph County, a member of Smyrna United Methodist Church, and retired from Ithaca in Robbins.

  Survivors include husband, Elaster “Boob” Hussey of the home; daughter, Ellen Deese of Carthage; sons, Tommy Hussey of Bennett, Roanld Hussey of Robbins; brothers, Garvin McNeill of Biscoe, Richard McNeil of Vass, Paul McNeill of Bear Creek, Roy McNeill of Robbins; sisters, Dora Kennedy, Nettie Reynolds, Maxine Ritter, all of Robbins, Rillie Turner of Troy, Lorene Hussey of Ramseur; three grandchildren and four great-grandchildren.

  Visitation will be Wednesday, 6-8 p.m. at Joyce-Brady Funeral Home in Bennett.

ESTA MAE HARMON

  Esta Mae Harmon, 83, of Pittsboro died Friday, (06-18-04) in Laurels of Chatham.

  Graveside services were held at 12:30 Sunday, (06-20-04) at Gum Springs Baptist Church Cemetery.

  Mrs. Harmon was a native of Surry County, former owner-operator of Sun Valley Restaurant in Pittsboro.

  Survivors include daughter, Bonnie Partin of Pittsboro; son, James Hackney of Pittsboro; three grandchildren and three great-grandchildren. 

  Memorials may be made to Gum Springs Baptist Church.

Mary Alice says the flavor is wonderful and best of all it is quick and easy to prepare.

 

 

ROAST PORK TENDERLOIN

WITH CARAMELIZED ONIONS

(Serves 4)

 

3 tablespoons olive oil

1 tablespoon dry mustard

½ teaspoon coarse salt, or to taste

½ teaspoon freshly ground black pepper, or to taste

2 pork tenderloins (1-1 ½ pounds total)

3 red onions, halved and thinly sliced

1/8 teaspoon sugar

2 tablespoons chopped fresh sage

 

Set the oven at 450 degrees.

 

In a small bowl, combine 1 tablespoon of the oil and the mustard, salt, and pepper. Rub over the pork so it is well coated.

 

In a large skillet with an oven-proof handle (cast-iron works well), heat 1 tablespoon of the remaining oil and cook the onions with a pinch of salt and pepper over medium heat, stirring often, for 5 minutes. Add the sugar and sage, turn the heat to medium-high, and continue to cook, stirring often, for 20 minutes, or until the onions begin to caramelize.

 

Remove the onions from the pan and set them aside. Add the remaining 1 tablespoon oil to the skillet and set the pan over medium-high. Add the pork tenderloins and brown, turning them often for 3 minutes.

 

Place the skillet in the oven and roast the pork for 10 minutes, or until a meat thermometer inserted in the center registers 150 degrees. The meat will be pink. If you prefer meat this is not pink in the center, cook the pork to 160 degrees, about 5 minutes more.

 

Remove from oven and allow to rest for a few minutes. Slice on the diagonal and serve with the caramelized onions.
