Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I found  this recipe for Onion-Apple Wild Rice in a cookbook that I bought in Homer, Alaska while Mary Alice’s family was living in Alaska. I had not looked at the book very much but while I was browsing through it several weeks ago I saw this recipe and decided to try it. We both thought it just delicious and it was incredibly easy to prepare. I used a Liebfraumilch that was inexpensive that I bought at a local grocery store.

I think this dish would be a very good side dish for either pork or poultry. Alan even thought it would be good with fish!

ONION-APPLE WILD RICE

(Serves 6)

1 box Uncle Ben’s original recipe wild and long grain rice

1 tart apple, diced (Granny Smith)

1 large onion, diced

1 cup semi-sweet white wine (like a Rhine wine)

The directions on the box of rice call for using 2 1/3 cups of water. To prepare this recipe, measure 1 1/3 cups of water and discard ˝ cup of this water. Pour remaining water in the pot. Add the wine to the pot. Add diced apple and onion, seasoning packet from rice and rice and cook according to directions on the package.
