Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

One of my neighbors brought me some fresh blueberries from eastern North Carolina last week so I tried this recipe for Blueberry Orange Bread. This is really yummy and so easy. Make several loaves and keep some in your freezer for unexpected guests.

BLUEBERRY-ORANGE BREAD

 (Serves 12)

2 tablespoons butter

¼ cup boiling water

½ cup orange juice

1 tablespoon grated orange rind

1 large egg

1 cup sugar

2 cups flour

1 teaspoon baking powder

¼ teaspoon salt

½ teaspoon baking soda

1 ¼ cup fresh blueberries

Melt butter in boiling water; add orange juice and rind. Beat egg and sugar together and mix with the orange mixture. Add dry ingredients and mix gently. Fold in the blueberries. Pour into a greased and floured load pan.

Bake at 350 degrees for 60-70 minutes. (It only took 60 minutes in my oven.)

 May freeze.
