By Mary John Resch
Several weeks ago I baked these Chocolate Chip Peanut Butter Squares when I needed to contribute something for the coffee hour at church. I unfortunately found these to be addictive. They are easy to prepare but like all bar cookies watch them carefully so you don’t overcook them. In my oven with my pan 25 minutes seemed to be about right but absolutely no more.
CHOCOLATE CHIPPEANUT BUTTER SQUARES(Serves 24)
1 cup butter, softened ¾ cup light brown sugar ¾ cup white sugar 2 eggs ½ teaspoon vanilla 2 cups flour 1 teaspoon baking soda ½ teaspoon salt 1 ½ cups semi sweet chocolate chips 1 ½ cups peanut butter chips
Cream butter, sugars, eggs and vanilla until light and fluffy. Combine flour, baking soda and salt; add to creamed mixture. Combine both chips and stir into batter. Spread mixture evenly onto a well-greased jelly roll pan.
Bake at 350 degrees for 25 minutes. Cool in pan before cutting into squares. Makes 50-60 squares depending on how you cut them. May freeze if you have any leftovers. |
