Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I have been trying to use my slow cooker more since the holidays.  This recipe for a Dill Pot Roast has been a family favorite for years.

I am printing this recipe again to show you how you can adapt it and cook it in your slow cooker.  You will enjoy using this technique for an old favorite.

DILL POT ROAST

Serves 6

3 lb. rump, arm or chuck roast

¼ tsp. pepper

1 tsp. salt

1 tsp. dill seed

¼ cup water

1 Tbl. wine vinegar

3 Tbl. flour

1 cup sour cream

1 tsp. dill weed (1 Tbl. fresh dill weed)

Season beef with salt, pepper and dill seed.  Place in an ovenproof dish; add water and vinegar.  Cook, covered, in a 200 degree oven for 5 hours.  Remove meat.  To the liquid in the pan, add flour and dill weed.  Cook and stir to thicken.  Add sour cream.  Spoon sauce over sliced beef.  This should actually serve 8 people unless they are really hungry.

This recipe may also be prepared in a slow cooker.  To prepare it this way, sprinkle both sides of the meat with salt, pepper, and dill weed.  Place the roast in your slow cooker and pour the water and vinegar over the roast.  Cover and cook on a low setting for 8 to 10 hours or until done and tender.

To prepare the sauce, remove the meat from the pan.  Pour juices in a sauce pan, add flour and dill weed.  Cook and stir to thicken.  Add sour cream.

This is one of my favorites.  The leftovers make a great open face sandwich on good sourdough or French bread.

Be sure to use long grain rice – you don’t want the rice to stick together.
