By Mary John Resch
When the weather is as cold as it has been recently, I like something warm and comforting for lunch. Soup is the first thing that comes to mind to solve this dilemma but sometimes I want something a little more solid. This Light and Cheesy Broccoli Casserole is a good cold weather lunch or it would be nice for a light supper. It is also a good way to use a little leftover ham and once your broccoli is thawed it is quick and easy to prepare. I think you will enjoy this.
LIGHT and CHEESY BROCCOLI CASSEROLE Serves 8
1 10-ounce package chopped broccoli, thawed and drained 1 cup sour cream 1 cup cottage cheese ½ cup Bisquick baking mix ¼ cup butter or margarine, melted 2 eggs 1 cup ham, chopped 1 tomato peeled and thinly sliced ¼ cup grated Parmesan cheese
Heat oven to 350 degrees. Grease lightly a 8x8x2-inch baking dish. Spread the drained broccoli in the dish. Beat sour cream, cottage cheese, baking mix, butter and eggs with a hand beater. Beat for one minute. Stir in ham. Pour over the broccoli. Arrange the tomato slices on top. Sprinkle with the Parmesan cheese. Bake until golden brown, about 30-40 minutes. Cool about 5 minutes before serving. |
