Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

Mary Alice gave me this recipe that her friend Karin Evans served her family when they visited her in Alaska.

Karin used turkey when she made the soup, but when I made it I used leftover roast chicken. We both liked this and since I served rice with my chicken meal it enabled me to use 2 leftovers! I used mild picante sauce but if you prefer you could use a medium heat sauce.  This is a great recipe to add to your list of things to do with leftovers.

Soup/Turkey or Chicken Rice

Serves 12

1 28-ounce can whole tomatoes, undrained

½ cup chopped onion

4 cups leftover chicken or turkey, cubed

29 ounces chicken broth

2 cups cooked long grained rice

1 10-ounce package frozen corn, thawed

¾ cup picante sauce (mild)

¾ teaspoon cumin

1 teaspoon chili powder

In a food processor, combine the tomatoes and onions.  Process until smooth.  Pour into a soup pot.  Add the chicken or turkey, broth, rice, corn, picante sauce, cumin and chili powder.  Bring to a boil, reduce heat and simmer for 10 minutes.

Be sure to use long grain rice – you don’t want the rice to stick together.
