Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I tried this recipe for Chicken with Potato Skin before Christmas and we both enjoyed it. It is not very difficult to prepare and I was pleased at how good the leftovers were for lunch later in the week.

CHICKEN with POTATO SKIN

(Serves 4)

¼ cup firmly packed fresh parsley leaves

1 large clove garlic

1/4 cup Dijon mustard

1 medium-sized baking potato, peeled and cut into large chunks

1 ½ teaspoons olive oil

2 whole chicken breasts, skinned, split, rinsed and patted dry

¼ teaspoon freshly ground black pepper or to taste

Process parsley in a food processor fitted with a metal blade. Add garlic through the feed tube with the motor running.  Add mustard; process 10 seconds. Transfer mixture to a small bowl; set aside.

Shred potato in the food processor fitted with a medium shredding blade. Put potato shreds in a bowl of cold water; let stand 5 minutes; Rinse; drain thoroughly. Pat potato shreds dry with paper towels. Dry bowl. Put potato shreds back into bowl; toss thoroughly with oil.

Heat oven to 375 degrees. Brush each chicken piece with ¼ of the mustard mixture. Put chicken bone side down onto a jelly roll pan. Top each chicken piece with ¼ of the potato shreds, spreading shreds into a thin, even layer to replace the chicken skin. Sprinkle lightly with black pepper.

Bake until chicken juices run clear when you pierce the chicken and a meat thermometer reads 170 degrees, about 20 minutes. Set oven to broil; broil until potatoes are crisp, about 5 minutes.
