By Mary John Resch This recipe for Hot Buffalo Chicken Sandwiches is another from Mary Alice’s friend Kyla Moles. She says that this is yummy – a real favorite with men. Her favorite hot sauce to use when preparing this is Frank’s Red Hot. I have not checked local groceries to check availability of this, if you can’t find it, make a substitution. If you are concerned that this might be too hot for you, try brushing some of the sauce on the chicken breast rather than dipping the entire thing in the sauce. This sandwich is a nice change from hamburgers and hot dogs.
HOT BUFFALO CHICKEN SANDWICHES(Serves 4)
4 skinless boneless chicken breasts ½ teaspoon salt or to taste 1/8 teaspoon pepper or to taste 1/8 teaspoon paprika ¼ teaspoon chili powder
2 tablespoons butter ½ cup cayenne pepper sauce
4 Bib or leaf lettuce leaves 4 crusty rolls, split 2 cups sour cream 4 scallions, thinly sliced ½ pound blue cheese, crumbled
Pound chicken breasts to uniform thickness. Season with salt, pepper, paprika, and chili powder. Drizzle with a little olive oil. Heat skillet or a stove-top grill pan over medium heat. Pan grill chicken for 5 minutes on each side or until done.
Heat a small skillet over low heat and melt butter. Add hot sauce to butter and combine. Add cooked chicken to this pan and coat evenly with the hot sauce mixture.
Place chicken on bun bottoms and top with lettuce.
Combine sour cream, scallions and blue cheese and slather on bun tops.
Use remaining blue cheese sauce for dipping veggies like red onion, celery and carrot sticks and pepper strips. |
