By Mary John Resch This Shrimp with Garlic Sauce is delicious and very quick and easy to prepare. I served this with the sauce over rice. I also think it would be very good served over toasted sourdough bread.
SHRIMP with GARLIC SAUCE(Serves 2)
6 tablespoons olive oil 1 garlic clove, minced 4 teaspoons minced parsley leaves 3 tablespoons fresh lemon juice 1/3 cup medium-dry Sherry ¾ pound shrimp, shelled with the tails left intact and deveined
In a skillet, heat the oil until it is hot but not smoking. Add the garlic and 2 teaspoons of the parsley and cook the mixture over moderately high heat until the garlic is browned lightly.
Stir in the lemon juice, Sherry, and salt and freshly ground pepper to taste.
Add the shrimp and cook them stirring for 4 to 6 minutes or until they turn pink and are just firm.
Transfer the shrimp to a heated platter, spoon the sauce over them, and sprinkle with the remaining 2 teaspoons of parsley. |
