PEGGY LANGLEY BURKE

  Peggy Ann Langley Burke, 64,

of 1817 Shady Grove Church Road, Staley,  died Thursday (02-12-04)  at home. 

  Services were conducted Saturday,  (02-14-04) at Sandy Branch Baptist Church by Rev. Robert Capps.

  Mrs. Burke was a native of Randolph County and retired from Collier-Keyworth, Inc., in Liberty.  She was a member of Sandy Branch Baptist Church, where she was a  member of the Ixthus Sunday School Class. 

  Survivors include husband, Raeford Burke of Staley; son, Ronnie Burke of Sanford; brothers, Eugene Langley of Liberty, Tommy Langley of Staley; sisters, Hilda McMasters, Marie Meacham, and Linda McManus of Liberty; and one grandchild.

 HILDA JEAN HARRIS

   Hilda Jean Harris, 61, died Tuesday,  (02-03-04) in Baltimore, Md.

   Services were held Saturday,  (02-07-04) at Vaughn C. Greene Funeral Services, P.A. in Randallstown, Md.

  Mrs. Harris  was a native of Chapel Hill. 

  Survivors include her husband, Hearly Harris, Sr., daughters, Linda K. Harris, Jeanie H. Wright, Maggie H. Tayler, Debrah H. Gray; sons, Hearly Harris, Jr., Anthony Harris, Alvis Harris, Michael Harris, Rodney Harris, and Davon Harris; sister, Melinda Lyons Freeman of Burlington; brothers, Eugene Lyons, Jr. of Pittsboro, Charles F. Lyons of Durham, Timothy Lyons of Butner, David S Lyons of Chapel Hill, twenty grandchildren and five great-grandchildren.   

FLOYD DENNIS JORDAN

 Floyd Dennis Jordan, 74, of 384 McKay Drive, Spring Lake died Friday, (02-13-04) at Manorcare Health Services, Pinehurst.  

   Services were held Monday,  (02-16-04) at Bridges-Cameron Funeral Home Chapel in Sanford.

 Mr. Jordan was a native of Forsyth County.

 Survivors include his wife, Flora Styles Jordan of Winston-Salem; sons, Mike Jordan of Sanford, Dennis Jordan of Lexington, John Jordan of Spring Lake; brother, Dennis Parker Jordan, Jr. of Bear Creek; sisters, Frances Morrison, Peggy Hall, Linda Heselmayer, Judy Warren, all of Sanford; eight  grandchildren and one great-grandchild.

  The family requests that memorials be made to Northview Baptist Church, 210 Amos Bridges Road, Sanford, N.C. 27330.

GEORGE RAYMOND SMITH, SR.

 George Raymond Smith, 77, of 209 Patterson Road, Kings Mountain, died Monday, (02-16-04)

   Services were held Wednesday, (02-18-04) at Ollie Harris Memorial Chapel, Kings Mountain with Rev. Eugene Land, officiating. Interment was at Mountain Rest Cemetery, Kings Mountain. 

 Mr. Smith was a native of Chatham County, a member of Tyson Creek Baptist Church in Bear Creek, and retired from the N.C. Department of Transportation in Shelby. 

 Survivors include his wife, Mahrier C. Smith,  Gastonia; daughter, Patricia Ann Shaw,  Kingsport, Tenn.; sons, George Raymond Smith, Jr., Ill., Johnny Lee Smith,  Sweetwater, Tenn, Howard Ray Smith,  Dillsboro; step-son, Charles Allen, Pinehurst; brother, William “Bill” Smith, Greensboro, Joe Donald Smith, Bear Creek; sisters, Rachel Turner, Raleigh, Sue Copeland, Bear Creek; 13 grandchildren and numerous great-grandchildren. 

 

 

DONALD HUMPREY DANIEL, SR.

Donald Humprey Daniel, Sr., 93, of 1302 S. Chatham Avenue, Siler City died Monday, February 16, 2004 at Chatham Hospital.

Funeral services are being conducted at 2 p.m., Thursday, February 19 at J.W. Call Funeral Home Chapel, Pikeville, KY. by Rev. Don Daniel, Jr. Burial will be in Johnson Memorial Park in Pikeville.

Mr. Daniel was a native of Boyd County, KY., and a retired miner. He was preceded in death by two sisters, Ogla and Flow Daniel.

Survivors include his wife, Agnus Newby Daniel of Indianapolis, IN.; sons, Roscoe Edward Daniel of Denton, Rev. Donald H. Daniel, Jr. of Siler City; daughters, Ruth Daniel Briggs of Indianapolis, IN., Erma Daniel Darnell of Mouth Card, KY., Clotern Daniel Vanderpool of Dillion, S.C., Donna Daniel Ritter of Bennett; brother, Isamel Daniel of Ashland, KY.; sister, Marjorie Daniel Cagg of Nelsonville, OH.; fifteen grandchildren, thirty great-grandchildren, and six great-great-grandchildren.

 HARVEY D. BROWN

Harvey Dowd Brown, 92, of 5323 Lewis Brown Rd., Bennett died Sunday (02-15-04) at Chatham Hospital in Siler City.

Services were conducted at 2 p.m. Thursday (02-19-04) at Pleasant Grove Christian Church with Rev. Chris Wood and Rev. Thurman Williams officiating.  Burial followed in the church cemetery. 

 Mr. Jordan was a native of Randolph County, owner and operator of Brown’s Grocery Store for 30 years, a retired farmer, and member of Pleasant Grove Christian Church. 

 Survivors include sons, Larry Brown, Coleridge, Jerry Brown, Bennett; daughters, Mary Lee Brady,  Coleridge, and Billie Faye Davis,  Bennett; 18 grandchildren, 25 great-grandchildren, and three great-great-grand-children.

Memorials may be made to Pleasant Grove Christian Church Cemetery Fund, 5946 Pleasant Grove Church Road, Bennett, N.C. 27208. 

MRS. LOTTIE FUTCH PRIDGEN

Lottie Futch Pridgen, 87, of Rocky Point died Friday (02-13-04) at Rex Rehabilitation and Nursing Care Center in Raleigh. 

Services were conducted Monday, (02-16-04) at Riley’s Creek Baptist Church with the Rev. Blake Hayes and Pastor Harold Fletcher officiating.  Burial followed in Pike Creek Cemetery.

Pall bearers were Sam Barbee, Rusty Walker, Jarred Purdon, Durk Tyson, Charles Futch and George Futch, Jr.  

Mrs. Pridgen was born in Rocky Point, and a member of Riley’s Creek Baptist Church. 

Survivors include daughter, Jane Pridgen Walker, Raleigh; sons, John Pridgen, Mims, Fl., James Pridgen, Goldston, Evans Pridgen, Apex; brother, George Futch of Wilmington;  eight grandchildren, and  eleven great-grandchildren.

EMMA MANN YATES

   Emma Mann Yates, 90, of 70 Post Office Road, Moncure,  died Sunday,  (02-15-04) at home.

   Services were held Wednesday (02-18-04) at Greenlevel Baptist Church in Greenlevel with burial in the church cemetery. 

   She was a native of Chatham County, a member of the Moncure Baptist Church and the Moncure Fire Department Ladies Auxilliary.

   Mrs. Yates is survived by one grandson, Trent Ray,  of Piedmont, S.C.

 SHERMAN FOREMAN

   Mr. Sherman Foreman, 72, a local artist from Siler City died Monday, February 16.

   No services are planned at this time.

(Or 'good grief, it's suppertime again')

  Several weeks ago I tried this recipe for a Chicken Pie.  It is very similar to other recipes that you have probably prepared, but the pancake mix, cornmeal and cheese give it a slightly different twist that we both enjoyed.

  I used leftover-diced chicken –another good way to use leftovers.

 This reheated in the microwave the next day with no loss of flavor

 

   

    

CHICKEN PIE

Serves 8

 

3 cups cooked diced chicken

½ cup milk

½ cup sour cream

2 cans cream of chicken soup (undiluted)

 

½ teaspoon salt

1 large egg, beaten

¾ cup milk

½ cup cornmeal

1 cup buttermilk pancake mix

2 cups shredded sharp Cheddar cheese

 

  Combine chicken, ½ cup milk, sour cream and soup in a saucepan.  Heat and pour into a 9x12 inch pan. 

  Combine salt, egg, ¾ cup milk, cornmeal and pancake mix.  Blend together.  Fold in the cheese.  Spoon evenly on top of the hot,  chicken mixture.  Bake uncovered in a preheated oven for 20 to 30 minutes at 375 degrees.

  I think this would also be good substituting cream of mushroom soup for the cream of chicken soup.

however, no breakfast is served
