By Mary John Resch I hardly ever make pancakes unless it snows so I tried this recipe the Sunday morning everything was cancelled. We both really liked these, in fact, I thought they were some of the best pancakes I have ever had. I went ahead and stirred my dry ingredients together the night before so that all I had to do the next morning was jump dump, stir, cook and enjoy!
SWEDISH OATMEAL PANCAKES(Serves 6)
2 cups old-fashioned oatmeal 2 cups buttermilk ½ cup all purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/8 teaspoon salt 2 eggs, lightly beaten ¼ cup butter, melted and cooled
In a large bowl, mix oatmeal and buttermilk. Let stand, covered in the refrigerator overnight.
The next day, sift together flour, baking soda, baking powder and salt. Stir the flour mixture into the oatmeal mixture. Add the lightly beaten eggs and the melted butter. Add more buttermilk if the batter is too thick. (I found that I needed to add more buttermilk – just add it by the tablespoon until you get the batter the consistency that you need.)
Spoon onto a lightly greased hot griddle and cook until bubbles appear, then flip pancakes and cook until golden brown.
Serve hot with berry preserves and sour cream and applesauce or your favorite pancake syrup. |
