Before Christmas a friend called and asked for the recipe for this Chocolate Sheet Cake that had been in the column years ago. She suggested that I ought to run it again. Alan’s sister gave me the recipe and you will often see it in older cookbooks under one name or another. It is a delicious cake and very easy to make. Actually several squares of this cake would be wonderful to share with friends and neighbors for Valentine’s day and if it is fresh from the oven and still slightly warn, it’s even better. This recipe is a good one to have for times when you want to serve a lot of people.
CHOCOLATE SHEET CAKE Serves 30 1 stick butter ˝ cup vegetable oil 4 tablespoons cocoa 1 cup water 2 cups sifted flour 2 cups sugar ˝ cup buttermilk 2 eggs 1 teaspoon soda 1 teaspoon vanilla
1 stick butter 4 tablespoons cocoa 1/3 cup buttermilk 1 pound confectioners sugar ˝ teaspoon salt 1 teaspoon vanilla 1 cup chopped nuts (optional)
Melt 1 stick butter, vegetable oil, 4 tablespoons cocoa and water. Remove from heat and pour over flour and sugar, which you have stirred together. Mix well. Then add ˝ cup buttermilk, eggs, soda, and 1 teaspoon vanilla. Stir together. Pour into a greased broiler pan. Bake for 20 minutes at 400 degrees. While cake is hot spread, with frosting. Frosting: Bring 1 stick butter, 4 tablespoons cocoa and 1/3 cup buttermilk to boiling point. Remove from heat. Add ˝ teaspoon salt, 1 teaspoon vanilla and chopped nuts if desired and spread on hot cake. Cut into 30 squares (or any number you want) to serve. |
