Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

 By Mary John Resch

Mary Alice suggested that the column before New Year’s Eve parties might be a good one to feature some nibbles that might be enjoyed then or perhaps later for Super Bowl festivities or during basketball games.

Terry Reneo, a friend of hers served the Tomato Bacon Bites recently and Mary Alice thought they were delicious. You might want to fix some extras because it sounds as if people might come back for seconds or even thirds or more!

Mary Alice says that this Fruit Spread or Dip is very popular with her friends now. I think it is so good that you want to eat it by the spoonful. I think this would work using light cream cheese.

The Barbequed Pecan recipe is from Caroline’s 2004 school cookbook.

TOMATO-BACON BITES

(Serves 8)

1 package refrigerated, layered buttermilk biscuits

8 slices bacon, cooked and crumbled

½ cup mayonnaise

¾ cup shredded Swiss cheese

1 small tomato, chopped

½ cup chopped onion

½ teaspoon dried basil (or 1 teaspoon fresh)

Divide biscuits in half and place in mini-muffin tins and press into the tin, making a small shell.

Combine remaining ingredients. Divide equally among the prepared biscuit cups.

Bake at 350 degrees for 20-25 minutes.

FRUIT SPREAD or DIP

(Serves 8)

1 8-ounce block of cream cheese

½ cup granulated sugar

½ cup brown sugar

1 8-ounce bag Heath milk chocolate toffee bits

Soften cream cheese. Mix sugars with cheese until well blended. Add Heath bits.

If you want a thinner sauce for dipping, add sour cream until you achieve the consistency you want.

This is wonderful with strawberries and tart apples like a Granny Smith. I tried this as a spread with graham crackers and like this. I also think it might make a delicious icing for a brownie even if it might be a little messy.
