Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

I think that when you have a meal that involves a lot of preparation that it is nice to include a congealed salad. You can make this in advance and spare yourself some additional work and clean up when you are trying to make everything come together for the big feast.

This Red Pepper Jelly Aspic is delicious with a beef roast and in addition, it adds a colorful touch to your holiday table.

RED PEPPER JELLY ASPIC

(Serves 10)

4 cups V-8 juice

3 tablespoons confectioners’ sugar

1 tablespoon dried tarragon

½ cup mild vinegar (tarragon or white wine are good choices)

3 tablespoons lemon juice

4 tablespoons (4-packets) unflavored gelatin, softened in ½ cup

   cold water

5 ounces red pepper jelly

Oil 12 individual aspic molds or a 6-quart ring mold.

Heat 1 ½ cups V-8 with sugar and tarragon. Add vinegar and lemon juice. Add gelatin; stir until dissolved. Add jelly; stir until dissolved. Add remaining V-8 juice.

Pour into molds. Chill until set, at least 3 hours or overnight.

To serve: un-mold on bed mixed lettuce; serve with Green Goddess dressing or mayonnaise if desired.

You may also place this in a large flat casserole and cut into squares to serve.
