 MRS. NANCY JANE HICKS ELLIS

  Mrs. Nancy Jane Hicks Ellis, 79 of Pittsboro died Monday (12-06-04) at Central Carolina Hospital in Sanford.

  Services were conducted at 2 pm Thursday, (12-09-04) at Brush Creek Baptist Church with pastor Ray Gooch, officiating. Burial followed in the church cemetery.

  Mrs. Ellis was a native of Chatham County, a homemaker and attended Brush Creek Baptist Church.

  Survivors include a daughter, Katie Mae Sanderford of Pittsboro; and a sister, Florence H. Thrift of Siler City.

 MRS. CHRIS ANN THOMPSON

  Mrs. Chris Ann Thompson, 52 of Siler City died Sunday (12-05-04) at Duke Hospital in Durham.

  Funeral services were held at 2 pm on Friday (12-10-04) at First Missionary Baptist Church with Rev. Barry Gray officiating. Burial followed in the church cemetery.

  Survivors include husband, Eddie W. Thompson of the home; son, William Thompson of Rowland; daughters, Erica Williams of Greensboro, Barbara Thompson, Latoya Thompson, both of Siler City; mother, Mrs. Christine Carter of Siler City; sisters, Patricia Johnson, Rosa Marsh, Berta Shamburger, all of Siler City, Mary Jane Carter of Troy; brothers, Donald Carter, Clinton Carter, Earl Carter, Rev. Gary Carter, all of Siler City; and one granddaughter.

  JACK M. HENDERSON

  Jack May Henderson, 62, of Franklinville died Monday (12-06-04) at his home.

  Funeral services were held at 2 pm Friday, (12-10-04) at Rives Chapel Baptist Church in Siler City with Rev. Larry Soblotne and Rev. Bruce Johnson officiating. Burial followed in the church cemetery.

  Mr. Henderson was a native of Horry County, S.C., retired maintenance employee, and of the Baptist faith.

  Survivors include his wife, Gail Dowd Henderson of the home; sons, David Henderson of Southern Pines, Kenny Elixson of the home; daughter, Rebecca Purple of Asheboro; sisters, Vivian Causey of Dillon, S.C., Sally Garner of Lumberton; brother, LeRoy Henderson of Lumberton; 4 grandchildren and 1 great-grandchild.

JAMES NEWTON “Steve” STEPHENSON

  James Newton “Steve” Stephenson, 72, of Sanford died Wednesday, (12-08-04) at UNC Hospitals in Chapel Hill.

  Funeral services were held Friday, (12-10-04) at Tyson’s Creek Baptist Church in Bear Creek with Rev. Randy Hand officiating. Burial followed in the church cemetery with Military Rites.

  Mr. Stephenson was a native of Tazewell, Va., a 20-year Master Sergeant with the U.S. Marine Corps.  and retired from the Town of Pittsboro Water Plant. He was a member of Tyson’s Creek Baptist Church where he was a past Deacon, teacher of the Men’s Sunday School class and the boys pre-teen class.

  Survivors include his wife, Helen M. High Stephenson of Sanford; brothers, John Stephenson of Marion, Va., Preston Stephenson of Richmond, Va.; sister, Connie Shields, Marion, Va., stepson, Mark Cotton of Sanford; stepdaughters, Angela Cloud of Malawi, Africa, Sharon Moffett of McKinny, Tx.; and four step-grandchildren.  

MRS. KATIE ELLEN JOHNSON WILSON

  Mrs. Katie Ellen Johnson Wilson, 89 of Apex, died Thursday (12-09-04) at Cambridge Hills Nursing Center in Pittsboro.

  Services were conducted at 2 pm on Saturday (12-11-04) at Ebenezer United Methodist Church with Pastor Bob Way officiating. Interment followed in the church cemetery.

  Mrs. Wilson was a native of Chatham County, a homemaker, and a member of Ebenezer United Methodist Church where she served as president of the Women’s Missionary Society and held  various other positions.

  Survivors include a daughter, Joan Frazier of Apex; son, Bobby R. Wilson of Damascus, Va.; brother, Ernest “Bill” Johnson of Bear Creek; sisters, Mabel Hancock of Chapel Hill, Florence Briggs of Carthage, Peggy Jenks of Graham; five grandchildren and four great-grandchildren.

CHARLES G. CHEEK

  Charles Glenn Cheek, 87 of Asheboro, died Monday, (12-13-04) at the V.A. Medical Center in Salisbury.

  Services were held at 2 pm on Wednesday (12-15-04) at Pleasant Grove Christian Church with Rev. Chris Wood and Rev. Thurman Williams officiating. Burial followed in the church cemetery with military honors.

  Mr. Cheek was a native of Randolph County, retired from Roby Kidd Electric Company and a WWII Army Veteran serving in Iceland as a member of the Medical Core. He was a member of the DAV Chapter 22 in Asheboro and a member of Pleasant Grove Christian Church.

  Survivors include his wife, Rachel Lamb Cheek of the residence; sons, Steve Cheek of Asheboro, Jeffery Cheek of Martinez, CA; daughters, Diane Best of Bessemer City, Sharon Smith of Raleigh; sisters, Lucille Poole of Ramseur, Ayleen Brady of Siler City; eight grandchildren and  six great-grandchildren.

  Memorials may be made to Pleasant Grove Christian Church, 5946 Pleasant Grove Church Road, Bennett, N.C. 27208; or to Hospice of Randolph County, PO Box 9, Asheboro, N.C. 27204.

FREEMAN NATHANIEL PERSON

  Freeman Nathaniel Person, 71, of Siler City died Monday (12-13-04) at his residence.

  Funeral services are being held at 2:00 p.m. Thursday, (12-16-04) at Smith & Buckner Funeral Home Chapel with Rev. Robert A. Griffith officiating. Burial will follow at Chatham Memorial Park.

  Mr. Person was a native of Chatham County and a truck driver for Perry Trucking.

  Survivors include his wife, Allene Little Person of Siler City; sons, Danny Person, Darlington, SC, David Person, Mike Currie, both of Siler City,  Ricky Person of Pittsboro; daughters, Florence Person of Pittsboro, Carolyn Person, Gloria Person, Della Nettles, all of Siler City, Joyce Cheek of Ramseur; brothers, John J. Person of Siler City, Jessie Person of Columbus, OH, Clyde Person of Ramseur, Russell Person of Coleridge; sisters, Elouise Williams of Siler City, Lula Mae Harris of Ramseur, Nancy Brady of Pittsboro; 22 grandchildren and ten great-grandchildren.

  Visitation was scheduled for Wednesday, (12-15-04) from 7 to 8 pm at the Smith & Buckner Funeral Home. They will be at the family home at other times.  

LEON LELAND LINDLEY

Leon Leland Lindley, 86, of Siler City died Thursday, December 9, 2004 at Britthaven of Chapel Hill.

Funeral services were held at 11:00 am, Saturday, December 11, 2004 at Mt. Vernon United Methodist Church, Siler City with Rev. Lamont Hemminger officiating. Burial followed at Mt. Vernon United Methodist Cemetery, Siler City.

Mr. Lindley was a native of Chatham County. He was a member of Mt. Vernon United Methodist church, and a member of the Senior Adult Sunday School Class. He was a contract milk-hauler for Flavor Rich, Inc.

Survivors include his wife, Martha Davis Lindley of Siler City; son, Ricky Lindley and wife, Elaine of Snow Camp; daughter, Sheila L. Hunt and husband, John of Hillsborough; granddaughter, Jonna Hunt, grandson, Cameron Lindley, and granddaughter, Kaitlyn Lindley.

Memorials may be made to Mt. Vernon United Methodist Church, Choir Loft Fund, 3631 Mt. Vernon-Hickory Mountain Road, Siler City, NC 27344.

MRS. REBECCA TEAGUE McLAURIN

  Mrs. Rebecca Teague McLaurin, 82, of Pittsboro died Friday, (12-10-04) at The Laurels of Chatham.

  Services were conducted at 11 am on Monday, (12-13-04) at Griffin Funeral Home with Pastor Ray Gooch officiating. Burial followed in Pleasant Hill United Methodist Church cemetery.

  Mrs. McLaurin was a native of Orange County, a member of Pleasant Hill United Methodist Church. She served as secretary at Horton Middle School for 25 years.

  Survivors include her husband, Daniel McLaurin, daughter, Kay McLaurin Smith of Holden Beach; son, Danny McLaurin of Pittsboro; and three grandchildren.

  Memorials may be made to Pleasant Hill United Methodist Church, Cemetery Fund.

 ROBERT BURNS

  Robert Burns of Moncure died Saturday, (12-11-04) at his home.

  A memorial service will be held at Chatham Methodist Church on Sunday, (12-19-04) at 2:00 p.m.

  Mr. Burns was a retired travel agency manager.

  Survivors include his wife, Dora Sue Upchurch Burns; son, Rodd Burns of the home; daughter, Allison Burns of New York City, N.Y.; brother, Barry Burns; sisters, Ginny Greene and Martha Grumette.

 MACK TALMADGE HAYES

  Mack Talmadge Hayes, 81, of Siler City died Friday, 12-10-04, in Asheville.

  Funeral services were held at 11 am Tuesday, (12-14-04) at Community Baptist Church in Siler City with Rev. Tad Marshall officiating. Graveside services will be held at 11 am, Wednesday, (12-15-04) at Grover Cemetery in Grover.

  Mr. Hayes was a native of Cleveland County and a member of Community Baptist Church. He was an Army Veteran of WWII and was retired from Collins & Aikman in Siler City.

  Survivors include brothers, Ray Hayes of Golden, MS, James M. Hayes and Carl Dean Hayes, both of Grover; sisters, Lula H. Townsend of Hickory, Mayola H. Blanton of Kings Mt., Beulah H. Houser and Elvie H. Allen, both of Grover.

  Memorials may be made to Community Baptist Church, 2575 Hamp Stone Road, Siler City, NC 27344.

 MRS. ANNIE MAE JOHNSON

  Mrs. Annie Mae Johnson, 87, of Siler City died Sunday, (12-05-04) at her home.

  Funeral services were held at 2:30 pm Thursday, (12-09-04) at Glovers Grove AME Zion Church with Rev. Gene Horton officiating. Burial followed in the church cemetery.

  Survivors include a daughter, Mrs. Shirley Glover of Siler City; son, Cleveland Johnson of Siler City; sister, Alice Alston of Greensboro; brother, James Edward Alston of Greensboro; five grandchildren and four great-grandchildren.

(Or 'good grief, it's suppertime again')

  Mary Alice attended a Squadron Wives Christmas Coffee last week at which they had a cookie exchange. This gave them all a chance to sample several types of cookies that they might not have tasted before as well as getting copies of all the recipes.

  I thought you might enjoy trying some of these recipes, too. I was really surprised that Mary Alice, who is not a coffee drinker, thought the Kahluha Chocolate Chunk Cookies were very good.

  I think they all sound delicious but then I adore cookies!

 

GINGERBREAD DROP COOKIE

(Serves 15)

1 cup shortening

1 ½ cup packed brown sugar

1 ½ teaspoon baking soda

1 ½ teaspoon ginger

1 ½ teaspoon cinnamon

¼ teaspoon ground cloves

1/3 cup molasses

2 eggs

1 tablespoon milk

3 ½ cups all-purpose flour

½ cup raisins

½ cup chopped nuts

 

  Beat shortening with a mixer on medium high for 30 seconds. Add brown sugar, soda, and spices. Beat until well combined. Beat in molasses, eggs and milk till combined.

  Beat in flour with mixer. Then add raisins and nuts. Drop by rounded teaspoons onto ungreased cookie sheet.

  Bake at 375 degrees for about 10 minutes or until lightly browned on bottom.

  If you prefer, you can also make these without the raisins and nuts.

  Yield: about 5 dozen.

 

SUGAR LEMON CRINKLES

(Serves 15)

1 cup shortening

1 ½ cups sugar

2 large eggs

1 teaspoon lemon extract

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

¼ cup sugar – more if needed

¼ cup powdered sugar – more if needed

 

  Beat shortening and 1 ½ cups sugar at medium speed with an electric mixer until fluffy. Add eggs and flavoring, beating until blended.

  Combine flour, baking powder, and salt, gradually add to shortening mixture, beating well. Cover and chill dough.

  Shape dough into 1-inch balls; roll in the additional ¼ cup sugar. Place on ungreased baking sheets.

  Bake at 350 degrees for 8 to 9 minutes,  or until barely golden. Cool 2 minutes on baking sheets; remove to wire racks to cool completely. Sprinkle powdered sugar over top of the cookies.

  Yield: about 5 ½ dozen cookies.

MINT CHOCOLATE CHIP CHOCOLATE COOKIES

(Serves 15)

1 cup (2 sticks) butter, softened

1 cup granulated sugar

¾ cup packed light brown sugar

2 teaspoons vanilla extract

½ teaspoon salt

2 eggs

2 cups all-purpose flour

½ cup HERSHEY’S cocoa

1 teaspoon baking soda

1 2/3 cup mint-flavored chocolate chips

 

  Preheat oven to 375 degrees.

  Beat butter, granulated sugar, brown sugar, vanilla and salt in a large bowl until creamy. Add eggs; beat well.

  Stir together flour, cocoa and baking soda; gradually add to the butter mixture, beating until well blended. Fold in mint chips. Drop by rounded teaspoons onto ungreased cookie sheet.

  Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.  Cool completely.

  Yield: about 5 dozen cookies.

 

KAHLUHA CHOCOLATE CHUNK COOKIES

(Serves 15)

1 package dry chocolate chip cookie mix, (1 pound, 1 ½

   ounces) found on baking aisle

7 tablespoons softened butter

1 large egg, beaten

4 tablespoons Kahluha or other coffee liqueur

3 tablespoons instant expresso or instant coffee crystals

1 tablespoons ground coffee beans

1 cup bittersweet chocolate chunks (recommended:

   Ghiradelli brand)

4 ounces chopped walnut pieces

 

  Preheat oven to 375 degrees.

  Place racks in center of the oven.

  In a mixing bowl, make a well in the center of the dry chocolate chip cookie mix. Add softened butter, egg, Kahluha, instant coffee and ground coffee, chocolate chunks and walnuts. Mix well to combine all ingredients into cookie dough.

  Scoop with a small scoop or by the heaping measuring tablespoon and drop cookies 2 inches apart on ungreased nonstick cookie sheet or cookie sheet lined with parchment paper.

  Bake cookies in batches 9 to 11 minutes or until crisp and browned at the edges. Transfer to a wire rack to cool.
