Kitchen Kapers (Or 'good grief, it's suppertime again') |

By Mary John Resch
This is a good time of year while fresh vegetables are so abundant to experiment with some different ways to serve old favorites. When tomatoes are ripe we always seem to have some that we need to find a way to use. Combining them with eggplant as is done in this casserole is a good way to serve them. I think you will enjoy this dish.
This casserole is a good one to prepare in advance and refrigerate before baking.
EGGPLANT-TOMATO BAKE(Serves 6)
6 slices bacon 1 green pepper, chopped 1 medium onion, chopped 1 large eggplant, peeled and chopped 4 medium tomatoes, peeled and chopped ½ teaspoon salt ¼ teaspoon pepper ½ cup grated medium Cheddar cheese ½ cup bread crumbs
Cook bacon in a large skillet until crisp; drain and crumble. Saute green pepper and onion in 2 tablespoons bacon drippings. Add eggplant and tomatoes; cook 5-7 minutes; add salt and pepper. Place in 2-quart casserole dish and top with bacon. Sprinkle with cheese and bread crumbs. Bake, uncovered, at 350 degrees for 25 minutes. |
