Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

My daughter Margaret sent me another recipe for a Black Bean salad that she thought was especially good. Unlike many of these salads, this one uses cucumbers, which she thought was a nice addition. When she made the salad, she eliminated the cheese, chips and seeds, so if you made it with all of these goodies, it would really be delicious.

BLACK BEAN STACKED SALAD

(Serves 8)

1 (15 ˝ ounce) can black beans, rinsed and drained

8 tomatillos, husks removed, rinsed and chopped (optional)

4 plum tomatoes, chopped

1 red onion, chopped

4 scallions, chopped

2 cloves garlic, chopped

1 (15 ˝ ounce) can yellow corn, drained and rinsed

1 English cucumber, cut in half lengthwise,

        seeded and finely diced

3 jalapenos peppers, seeded and shopped

2 cups broken or crushed tortilla chips

1 ˝ cups crumbled queso or fine grated Monterey jack cheese

4 limes (squeeze and use juice)

1 tablespoon chili powder

2 teaspoons ground cumin

˝ teaspoon ground coriander

˝ cup chopped cilantro or to taste

˝ cup peanut oil

˝ cup pumpkin or sunflower seeds, toasted

In a large, clear glass bowl, layer the beans, tomatillos if using; tomatoes, red onion, scallions, garlic, corn, cucumber, jalapenos, totilllas chips and cheese.

In a small nonreactive bowl, whisk together the lime juice, chili powder, cumin, coriander, cilantro and sugar. Whisk in the peanut oil in a thin steady stream and add salt and pepper to taste to make a vinaigrette.

Bring the layered salad and vinaigrette to the table. Just before serving, drizzle vinaigrette over the salad and toss to coat completely. Garnish with the pumpkin or sunflower seeds.

To toast seeds: Place seeds in a single layer on a baking sheet. Toast them in a 350 degree oven about 10 minutes, shaking pan periodically to turn the nuts, until nuts are golden and fragrant.
