Kitchen Kapers

Kitchen Kapers

(Or 'good grief, it's suppertime again')

By Mary John Resch

Several months ago I bought a copy of The Donvier Ice Cream Dessert Book by Anna Creery. This cookbook contains recipes for every type of ice cream imaginable in proportions for the smaller makers that use the technique of keeping the container in the freezer eliminating the need for ice and salt and making your cleanup very easy. Several manufacturers have these ice cream makers on the market and they usually retail for around $50.00. They are the perfect size for two people – although you should be able to serve 4-6 people depending on the size of your servings. I like to make this ice cream ahead of time so I can go ahead and pack and freeze it and thereby have a firmer product.

I tried these recipes recently and we enjoyed both of them. This is certainly an easy way to make the perfect summer dessert.

If you have this type of ice cream maker I think this is a book you might enjoy owning. My copy is soft cover but I don’t remember what I paid for it – it has 122 pages, so needless to say lots of ice cream recipes and ideas.

LEMONADE SHERBET

(Serves 6)

3 cups milk

1 cup frozen lemonade concentrate

¼ cup sugar or more to taste

1 drop yellow food coloring (optional)

Combine all ingredients and stir until sugar dissolves. Mixture will look curdled. Taste and add more sugar if you prefer a sweeter sherbet.

Place in ice cream maker container and freeze according to manufacturer’s instructions. When finished, pack in a freezer container and place in freezer.

NO CREAM PEACH ICE CREAM

 (Serves 6)

1 12-ounce can evaporated milk

2 cups fresh peaches or frozen without sugar

¾ cup milk

¾ cup sugar

¼ teaspoon almond extract

If using frozen fruit, measure while frozen, then let thaw. In a blender or processor, combine all ingredients. Puree.

Place in ice cream maker container and freeze. Makes about 1 quart.
